New food truck opens for safer dining

NORFOLK -- A northeast Nebraska man sees opportunity despite the uncertain times.

Back in March, the peak of the pandemic shut down most businesses, but for this Nebraskan, it was the beginning of his.

"One day I was getting my food and everything was closed due to the Corona Virus," Abe Montalvo Norfolk resident said. "That's when this idea popped up."

Montalvo is the owner and operator of Norfolk's newest food truck: El Barrigas

Currently, Nebraska is facing record numbers of COVID-19 cases, but Montalvo says the restaurant on wheels is a safe way to eat out.

"We don't have a place for people to sit," said Montalvo. "It's pretty much take-and-go."

All truck workers are required to wear masks, gloves, and wash their hands.

While the pandemic has put many restaurants at risk of closure, Montalvo has a different outlook.

"The pandemic can affect you or help you depending how you see it," Montalvo said. "I'm really positive about it. It's a bad thing going on, but we need to get the best out of the bad."

You can see the food truck right outside Abe's Detailing Thursday through Friday.
